Pimp Your BOL - Veganuary Edition

We’ve said it before, and we’ll say it again: our products are pretty great. With seven ranges, we pride ourself on variety, versatility and vegan food that simply tastes delicious.
But we love to experiment with flavour, and lunches in the Veg Pad never look the same. National Account Manager Karel loves to add a square of dark chocolate to his one pot meal (rogue). and Brand Manager Cassidy will add hot sauce to everything – even our Spicy firecracker udon. 
There are limitless ways to serve a BOL, so we’ve picked out a handful of our favourites. Read below and level up your mealtimes this Veganuary, no matter your culinary skillset, budget, or time.

Creamy Malaysian Laksa Ramen posh noodles
Creamy coconut-based sauce with a taste-topping trio of spiced Malay-style marinated chickpeas; fresh edamame and black turtle beans. With flavours of lemongrass, ginger, cinnamon and fenugreek. Our perfect additions are a wedge of lime, some sliced chilli, and roasted chickpeas. Plus, a handful of crispy tofu cubes for an extra protein boost.
Sweet potato katsu curry one pot meal
White rice, salad leaves, cucumber ribbons and pickled cabbage. Finish off with a wedge of lime. Close your eyes and taste the familiar flavour of a Japanese classic - that oh so heavenly balance of sweet and savoury; spicy and creamy. Only this time, it’s nutritionally complete, high in fibre and packed to the lid with plant powered goodness…
ENERGY BOOSTING Sweet potato cauli-daal power soup
Brimming with flavour and plant powered goodness, this turmeric infused daal inspired recipe features a hearty mix of beluga lentils, roasted sweet potato, cauliflower and rich coconut cream. Why not take the gentle spices of this curried soup and add a toasted naan or pitta and a swirl of coconut yoghurt. And if you’re not a hater, top it with some coriander. (We love it.)
Creamy coconut turmeric daal one pot meal
Plate up all the delight of your favourite curry house with none of the naughtiness. Inspired by South Indian flavours, this One Pot Meal packs a powerful protein punch, bursting with gently spiced chickpeas & lentils. We’ve added a BOL twist with chunky Bombay-style potatoes and warming turmeric, ginger & cumin flavours. Just microwave or heat on the hob your one pot meal and serve in your favourite bowl. Then, throw a plant-based naan, poppadom and a few spoonful’s of white rice on the side. A dollop of mango chutney or a sprinkling of red chillies wouldn’t go amiss either.
