We set some of the BOL team a challenge: asking them to get creative and Pimp Up their favourite Power Pot, plating up everything from Mexican Loaded Nachos to an Indian Feast. Think you can do better? Why don’t you create your own and replace shades of beige with our vibrantly spiced one-pot powerhouse, available in four fragrant flavours. Pot: Creamy Coconut Turmeric Daal
Here’s Georgie’s entry – an Indian Feast using her favourite Creamy Coconut Turmeric Daal. She’s spiced things up with a side of naan, coconut rice, some fresh red chillies, coriander and a squeeze of lime.
Pot: Piri Piri Sweet Potato & Coconut
Next up: Cat. She’s a fan of the Piri Piri Pot, and accessorized it with a dollop of coconut yoghurt, tender stem broccoli and a sprinkling of pumpkin seeds for good measure. Plus, a couple of crisps for essential dipping.
Pot: Mexican Black Bean Chilli
Introducing Jess’ Loaded Nachos. Salted tortillas piled high with smoky, sweet chilli. Finished off with sliced avocado, spring onion, cherry tomatoes and (lots of) chopped chillies.
Pot: Spanish Smoky Butter Bean Stew
Last but by no means least: Lydia’s Spanish brunch bowl. Just add on some black olives, ripe cherry tomatoes, baby spinach and a generous slice of homemade sourdough.
