MEDITERRANEAN ROASTED VEG SALAD

Fancy the taste of the Med in your lunchbreak? This recipe mixes up the warm, sun soaked flavours of roasted veg, fresh lemon and crunchy greens to recreate those clear blue skies, azure waters and hidden away beaches.
